Now, what if we told you that those awesome looking cupcakes are vegan? And gluten free. And free of corn, soy, peanut, tree nut, casein and refine sugars. Would you believe us? You might. But then you might also think something like : “Ugh, I bet they taste terrible”. Well, think again.
Those treats you see up there are probably some the most delicious we’ve ever had. The cupcakes are fluffy and moist. The icing is creamy, decadent and bursting with flavor, without being overly sweet. Just awesome. Nothing you would expect from a pastry that is free of pretty much everything…

Welcome to Sweet Freedom Bakery.
This cozy little shop caters to those suffering from food allergies and intolerances, and is also certified kosher and vegan. Allison Lubert, co-founder of the bakery and a Certified Nutritional Counselor, saw the need for an allergy friendly bakery after being diagnosed with several food allergies herself. And after lots of experimenting and planning, Sweet Freedom Bakery opened its doors in 2010.
Three years later, they’re still going strong. With a cookbook in the works, they just surpassed their goal on the Kickstarter campaign they started to fund the project.
When we spoke to Jen, manager of the bakery, about their experience with crowd funding, she said it was very “scary” and at the same time exciting. They sent out hundreds of emails. They reached out to everyone they knew to spread the word. And obviously, a big success for them.
Jen also shared with us a heart warming story about two 11 year old kids who celebrated their birthdays, and asked people to donate to the cookbook funding campaign instead of bringing birthday gifts . They raised over $500 in memory of the brother of one of the little boys, who passed away from complications from food allergies.
From a recipe developer’s perspective, we were amazed by the quality of the products we tasted when we visited the shop. Anyone who has ever attempted gluten free baking probably knows how challenging it is to come up with treats that aren’t dense, heavy and most of all, tasty! Experimenting quite a bit with different techniques and carefully selecting and testing their ingredients, the ladies at Sweet Freedom have been able to reach a perfect texture and consistency in their products. They use only high quality, all natural ingredients, like coconut sugar, maple syrup, ground flax seeds and cream of tartar to keep them “clean” and free from the most common allergens. From cupcakes, to cookies, donuts, bars, even ice cream. You name it, they bake it.
There is one ingredient however, that seems to always be present and we’re guessing is responsible for their success. That ingredient, is passion. Something we noticed right away the second Jen sat down to chat with us. Her enthusiasm, her excitement and her commitment to make a difference. Something you can taste in every bite.
