Today we are having some fun, we are participating in a chopped little challenge, with our friends at Kosher Connection. The challenge is to come up with a recipe using 2 of the 3 ingredients listed below:
Canned Corn (not creamed)
Mike and Ike's ( original - not the crazy ones)
Pears (any kind as long as they are fresh)

- Total Time: 30 mins
- Yield: 15 cups 1x
Ingredients
Scale
- 2tsp salted butter
- 1 Bartlett pear diced
- ½ ornagic canned corn
- â…› tsp salt
- â…› chopped dried rosemary
- â…› tsp pepper
- 15 Phyllo dough cups
- 3 tbs goat cheese
- 2 tbs milk
- 1 egg
- pinch of salt and pepper
Instructions
- Pre-Heat oven at 350F
- Melt butter in a pan
- Add pear, corn, rosemary, salt and pepper
- Cook at medium heat for 8-10 minutes until corn and pear start to caramelize
- While the pear and corn are cooking mix in a bowl goat cheese, milk and a pinch of salt and pepper.
- Mix well until you it becomes creamy
- Add beaten egg
- Add cooked pear and corn
- Add about 1 tbs of mix to each phyllo dough cup
- Bake at 350F for 15 minutes or until cup edges become golden brown
- Serve warm
- Prep Time: 15 mins
- Cook Time: 15 mins
