Chocolate and Peanut butter mousse is an absolutely delicious and decadent healthy - ish dessert that's vegan and gluten-free.
Who doesn’t love a great dessert? Especially a great chocolate-centric dessert? Even though there are probably a million reasons why people avoid chocolate these days (and probably a million more reasons why people indulge), we can never resist the urge to create a new chocolate themed treat. This time, we decided on a vegan chocolate and salted peanut butter mousse (try saying that one three times fast!).
The idea for the salted peanut butter and chocolate blend came after realizing how few healthy, or healthy-ish, options there are in stores for fans of this super popular combo. By making it at home, we had absolute control of the quality of ingredients and the amount of sugar we used and were able to make it vegan and gluten free. All that making it absolutely delicious and decadent!
Using unsweetened chocolate helped us with the sugar part. We sweetened the mousse with maple syrup to give it just the right amount of sweetness. To make it light and fluffy, we used a combination of coconut milk yogurt and our favorite all natural vegan coconut whipped topping: Cocowhip. We used a coconut based whipped topping instead of the traditional heavy whipping cream and eggs traditionally used in regular mousses, in order to make it lighter, but still creamy and enhancing the chocolate-peanut butter winning combo.
Another plus? It's a fool proof recipe, quick and simple. The perfect ending to any meal... 😉

Ingredients
- Chocolate layer
- 2oz unsweetened chocolate
- ¼ cup unsweetened coconut milk yogurt (here we used So Delicious)
- 1 tbsp maple syrup (or to taste)
- ¼ cup vegan whipped topping (here we used So Delicious Cocowhip), thawed
- PB layer
- 2 tbsp all natural salted peanut butter
- ¼ cup unsweetened coconut milk yogurt (here we used So Delicious)
- 1 tbsp maple syrup (or to taste)
- ¼ cup vegan whipped topping (here we used So Delicious Cocowhip), thawed
- Berries for garnish (optional)
Instructions
- For the chocolate layer:
- Melt the unsweetened chocolate in a heat proof bowl (you can do this over a double boiler or in the microwave at 20 second increments, stirring each time)
- Whisk in yogurt and maple syrup ( don't worry if little bits of chocolate solidify, it's actually better if that happens!)
- Gently fold in whipped topping until well incorporated. Refrigerate while you prepare the peanut butter layer
- For the peanut butter layer:
- Whisk together peanut butter, yogurt and maple syrup
- Gently fold in whipped topping until well incorporated
- Layer chocolate and peanut butter mousse in two glasses or bowls. Garnish with berries (optional)

This recipe is outrageous!! I was lazy and just made the chocolate and peanut butter all together. I made a batch to serve 8 people so adjusted the measurements. I didn't have the vegan whip so I used a can of coconut cream - refrigerated it and whipped it up. I served this with strawberries because it was so rich..
